Poppy Seed Chicken

This is one of my favorite dishes that my wife makes! It’s simple and easy for the running family crowd. In fact it’s a great recipe to cook up ahead of time and put in the oven any time. It’s creamy, buttery flavor goes very well with the chicken and crunchy Ritz crackers.
Serving Suggestions
This is a classic casserole so there are tons of sides that compliment it pretty well. The question is: To mix or not to mix? If you’re the type that hates for food to touch each other, this is going to be a difficult dish for you without a lunch tray from your local elementary school. Personally, I love to mix it up, especially with corn. It’s great with any fresh vegetables for a good wholesome meal.
The Recipe:
Serves 4-6
Ingredients:
1 can cream of mushroom
1 can cream of celery
8 oz. sour cream
3-4 chicken breast
1 package of Ritz crackers
1 stick of butter
1 tbsp. poppy seeds
Instructions:
1. Boil chicken, cut up into bite size pieces
2. Mix soups and sour cream together in medium bowl.
3. In medium casserole dish, mix chicken and soup mixture together.
4. Crush Ritz crackers over top of casserole dish.
5. Sprinkle poppy seed on top, to your liking.
6. Melt butter, spread on top.
7. Bake @ 350 degrees for 35-45 minutes or until bubbling on the sides.

I made the poppy seed chicken last night and we loved it! I used Rice-a-roni rice as the side and w mixed it all together. Yummy!
